Acai Bowls

A thick, spoonable smoothie bowl you build like a sundae. The trick is keeping everything frozen and adding as little liquid as possible, so it blends into a soft-serve texture instead of a drink.

Method

  1. Plan ahead

The bananas need to be frozen. Peel and slice them, then freeze in a bag for at least a few hours or overnight.

  2. Chill the bowls (10-15 min)

Put your serving bowls in the freezer. A cold bowl keeps the acai from melting while you add toppings.

  3. Blend (2-3 min)

Run the acai packets under warm water for a few seconds, then break them into chunks. Add the milk to the blender first, then the acai, bananas, ice, berries, and any add-ins. Blend on low, then increase the speed.

Ready whenIt is thick and smooth, like soft-serve, with no frozen chunks left.

WhyLiquid on the bottom helps the blades catch. Too much liquid turns it into a smoothie, so add more milk only 1 tbsp at a time if the blender stalls.

  4. Top and serve (2 min)

Scoop into the chilled bowls and add your toppings right away. Spoon the base in, then line up your toppings in rows across the top.

Make it cheffy

Build your toppings by texture

How

Pick one crunchy topping (granola or cacao nibs), one creamy topping (nut butter), and one fresh topping (sliced fruit). To drizzle the nut butter, stir together 4 parts nut butter to 1 part melted coconut oil.

Why

Contrasting textures make every bite more interesting, and the thinned nut butter sets into a light shell on the cold base.

Swaps

  • Any milk works: dairy, almond, oat, or coconut.
  • No acai? Use 1 extra cup of frozen berries.
  • Too runny? Add more frozen fruit or a few ice cubes and blend again.
  • Blender will not move? Stop, stir, and add milk 1 tbsp at a time.

Make ahead & storage

Storage

Best eaten right away. Freeze any leftover base in a container and blend again with a splash of milk.
