Method
Prep the oven
Move the oven rack so the top of the grapefruit will be 2-3 inches from the broiler, then set the broiler to high.
Prep (3 min)
Cut the grapefruit in half across the middle. If you like, run a paring knife around the edges and between the segments to loosen them.
Top (1 min)
Drizzle each half with honey and dust with cinnamon.
Broil (7 min)
Set the halves in the muffin tin and broil for about 7 minutes. Safety: the broiler works fast. Stay close and check every couple of minutes. If the honey starts to burn, lower the rack.
Ready whenThe top is bubbling and golden brown at the edges.
Serve
Serve hot with a spoon, alongside Greek yogurt or a spinach and mushroom frittata.
Make it cheffy
Finish with flaky salt and fresh mint
How
Right after broiling, add a tiny pinch of flaky sea salt and a few torn mint leaves.
Why
Salt tames the bitterness of grapefruit and makes the honey taste sweeter.
Swaps
- Honey → maple syrup or brown sugar.
- Cinnamon → a pinch of ground ginger or cardamom.
