Method
Zest, then juice (1 min)
Zest the lemon before you cut it, then juice half of it.
WhyIt is nearly impossible to zest a lemon after it has been cut and squeezed.
Blend (1-2 min)
Add everything to the blender and blend until smooth.
Ready whenIt is completely green with no white curds. If it is too thick, add water 1 tbsp at a time.
Taste and adjust (1 min)
Taste it and add more salt, pepper, or lemon as needed. Drizzle on grain bowls, fish, or roasted vegetables.
Make it cheffy
Season by tasting
How
Taste the sauce before adding salt. Add a pinch, blend, and taste again. Repeat until the flavors pop, then stop.
Why
Salt does not make food salty until you have added too much. Before that point, it makes the herbs and lemon taste brighter.
Swaps
- Dill → basil or cilantro.
- Cottage cheese → Greek yogurt (tangier, and a little thicker).
