Method
Start the bacon (15-20 min)
Make the Billion Dollar Bacon first. It takes the longest, or make it ahead.
Toast and spread (5 min)
Toast the bread. Mix the sriracha and Greek yogurt into a creamy spread. Spread it generously on one slice and cover the other with goat cheese. Top with arugula.
Heat the pan (2 min)
Heat the olive oil in a nonstick pan over medium heat.
Ready whenThe oil shimmers. If it smokes, turn the heat down.
Cook the eggs (3-4 min)
Crack the eggs into the pan and season with salt and pepper.
Ready whenThe whites are almost completely set, including around the yolk.
Flip (30 sec)
Slide the spatula fully under each egg and gently flip it in one motion. Cook 20-30 seconds more. Safety: runny yolks are not recommended for pregnant people, young kids, older adults, or anyone with a weakened immune system. For them, cook the eggs over hard (flip and cook 2-3 minutes more, until the yolk is firm) or use pasteurized eggs.
WhyA quick flip sets the top of the white while the yolk stays runny.
Build (1 min)
Place the eggs on the arugula, add the bacon, close the sandwich, cut it in half, and enjoy.
Make it cheffy
Crack eggs into a bowl first
How
Crack each egg into a small bowl, then gently slide it into the hot pan from as close to the surface as possible.
Why
You can fish out shell bits, the yolk is much less likely to break, and the egg holds a neater shape.
Swaps
- Goat cheese → sharp cheddar or feta.
- Arugula → spinach.
Make ahead & storage
Make ahead
